Berlin Pfannkuchen is a kind of doughnut, a sweet yeast dough made of egg, milk and butter which is filled with jam after baking with help of a hose bag. Briefly called Berliner or only Pfannkuchen, the fist-sized ball is deep-fried swimming in fat.
As the legend goes, a Berlin confectioner, who served as baker during a military campaign of Frederick the Great invented this sweet in 1756 in the field. He created his first "pancake" in form of a cannon ball and baked it in hot fat due to lack of an oven on the fire.
The Berliner spread all over Germany in the second half of the 19th century parallel to the rise of Berlin as an industrial town. Today Berliners are called different according to region and also the jam filling might vary in fruits and taste.
As traditional sweet Berliners are often served at New Year's Eve and carnival. A common joke is to fill some Berliners with mustard instead of jam, which of course cannot be noticed from outside. So the first bite might hide a surprise!
